Toasted Zucchini / Grilled Zucchini

In my first post I introduced a Tofu dish. Today I thought to share a Zucchini dish. The Zucchini is a vegetable, which belongs to squash family (pumpkin also belongs to squash family). It looks like cucumber but unlike cucumber, zucchini is usually served cooked.
This is a very quick and easy recipe :) I learnt this recipe from one of my friends.



Prep Time: 3 min     Cook Time: 5 min     Total Time: 8 min     Serves: 3

CURRY INGREDIENTS

  • 1 medium size zucchini - thinly sliced.
  • 1/4 teaspoon oil.
  • Salt to taste.

DIRECTIONS

  1. Add salt to zucchini slices.
  2. Sprinkle a little bit oil (around 1/4 teaspoon) in a non stick frying pan (or dosa thawa).
  3. Heat the pan in medium flame. Place zucchini slices and pan fry (toast) for 2-3 minutes until it turns slightly brown.
  4. Turn/flip the zucchini slices and fry the other side as well (until it turns slightly brown). Remove it from the pan.
  5. Serve it.

NOTES

  1. You can grill this rather than frying.
  2. You can eat this alone as a starter or serve with rice.
  3. Don't add more oil. You can toast zucchini without even adding oil.
  4. If like you can coat zucchini slices with melted butter before toasting them.
Nutrition fact: Zucchini contains low calories (approximately 15 calories per 100g fresh zucchini) and it contains useful amounts of folate, potassium and vitamins.
